Did you ever use a recipe and got angry because some things just weren’t in the right order? Did you ever bake a cake and got annoyed, reading that you should preheat your oven, after you already finished everything else?
I do and that’s why I want talk about two things in recipes that I think should be changed.
First of all there is the preheating. Depending on what oven you have, preheating can take quite a while, so why is it always the last step in a recipe? I personally would rather it was mentioned somewhere in the middle, so you can just put you cake, or whatever you are making, into the oven when you are ready. The reason for that is that some things need to be put into the HOT oven as soon as possible, otherwise they won’t rise properly.
The second thing that always irritated me, especially when I was baking a gugelhupf, was that you should beat the egg white AFTER you mixed everything else. The thing is, if you do that and don’t have two pairs of beaters you have to wash them in between steps. Why you may ask. The answer is, if you get anything fatty into the egg white, chances are that it won’t get stiff, no matter how long you keep beating it. On the other hand, if you beat the egg white beforehand you don’t have to clean the beater in between steps. I know that some of you might now shake your heads and say that the egg white shouldn’t stand around for that long because all the beaten in air might escape. In a way you are right but if the egg white is actually really stiff than three minutes standing around won’t do it any harm. Believe me I have tried.
My conclusion is, that you should always read a recipe carefully before you start baking or cooking. Maybe even ask yourself if some of the steps can be switched to make it more efficiently. For a long time I thought I could just blindly follow recipes step by step until I got annoyed and my mother told me that in some cases it doesn’t matter what you do first.
